This is a fun, light, and refreshing recipe perfect for a snack on a warm day (or any other time, really!).

Ingredients:

Bread

Butter

Tomatoes

Onion

Olive Oil

Garlic

Spices of your choice

Begin by chopping the tomatoes and onion. We usually purchase and quarter multi-colored cherry tomatoes (“wild wonders”) and mince the onion. Heat a bit of olive oil and minced garlic in a pan on medium heat until fragrant. Then, place the onion into the pan. Meanwhile, toast the bread. Once the onion is softened, add the tomatoes and their juices to the pan, along with a spice or spices of your choice. We prefer an Italian herbs blend. Once the tomatoes have softened just a bit (1-2 minutes), remove the pan from the heat. Butter the toast, and then place the tomato-onion mixture on top of the buttered bread. If you like, you can add a bit of cheese, such as parmesan, into the tomato-onion mixture either just before you take it off the heat or after you add it to the buttered bread. Eat immediately while the toast and tomato-onion mixture is warm. Enjoy!
