Ingredients:
Pasta of choice
Olive oil
Garlic
2 tablespoons Tomato Puree
1/2 packet of small heirloom tomatoes
Lemon juice
Red wine (if desired)
Crushed Red Pepper
Oregano
Fresh Thyme
Parmesan
Begin by preparing your preferred pasta. While the water for the water heats up for the pasta, place olive and chopped garlic in a frying pan. Once the garlic has cooked a little, add the tomato puree and mix. Chop half a packet of small heirloom tomatoes and places in the sauce. Squeeze lemon juice, drizzle red wine, sprinkle crushed red pepper, and dash in oregano to taste. Allow the sauce to simmer slowly while you cook the pasta. Once the pasta is cooked pour the sauce over the pasta. Sprinkle with fresh thyme and parmesan. Afterwards, you are left with a flavorful sauce that has a slight zing to it! We love this sauce and find it to be a flavorful, easy meal!
Side note: If you have a bell pepper you can dice it up and add it to the sauce for some vegetables in the dish.
