In an attempt to use some of our Savory Spice spices, we found a recipe for Greek Barley Salad on their website. Our local grocery store was out of barley, however, so we changed the recipe a bit to utilize what we did have.
Ingredients:
1/2 cup Greek yogurt
1 lemon
1 tsp. red wine vinegar
1/4 cup olive oil
Mt. Olympus Greek Style Seasoning
1 cup bulgur
1 bell pepper
1/2 cucumber
1/4 cup red onion
1 15 oz. can garbanzo beans
Prepare the bulgur according to the packaged directions. As the bulgur is cooking, combine the Greek yogurt, the zest and juice of the lemon, the red wine vinegar, the olive oil, the Mt. Olympus Greek Style Seasoning, and salt and pepper to taste. Mix together thoroughly, and place in the refrigerator to cool.
After the bulgur has cooked, place in a bowl. Dice the pepper, cucumber, and onion, and place in the bowl with the bulgur. Add the garbanzo beans, and mix together. Finally, mix the dressing thoroughly with the bulgur mixture. Cool in the refrigerator before serving.
