We were inspired by a HelloFresh recipe to make our own version of baked carrots. These include juice from freshly squeezed lemons for a zesty dish.

Ingredients:

Carrots

1 lemon

Olive oil

Salt

Pepper

Preheat oven to 425 degrees. Place foil on a baking sheet and rub a little olive oil on the foil to coat it. Place the carrots on the foil. We use whole baby carrots, but you can also cut the baby carrots in half or buy large carrots and slice them into thin strips. Drizzle a little more olive oil over the carrots, then squeeze the lemon over the carrots. You can squeeze as much as you like, but we usually use half a lemon. Sprinkle salt and pepper to taste. Place the pan in the oven for 15-20 minutes or until the carrots are tender. The result is a tangy side dish that goes with lots of different entrees.
