We often have carrots in the house for an easy side dish, but we like to mix up the way we cook them. There is probably a recipe out there that is the same or similar to this, but we had parsley in the house from making tabbouleh so we decided to try something new. Â Since moving to New York, we no longer have an oven and have to get creative. So toaster oven recipes have become quite popular in our home. This worked fine in the toaster oven and was a new spin on our various carrot creations.
Ingredients:
-Olive oil
-Garlic
-Parsley
-Carrots
We laid carrots in a pan and drizzled olive oil over the top. We then sprinkled garlic and parsley over the carrots and stuck them in the toaster oven for 30 minutes. It took less than five minutes to make, which is definitely a plus. Afterwards we were left with a new variation of carrots. This wasn’t probably our favorite side dish ever, but we enjoy trying new things. If you have suggestions for other herbs & carrot combinations-please let us know!
