This is an easy dish that we make regularly with a side of roasted potatoes and carrots. Preheat the oven to 400 degrees. We prep our potatoes and carrots first with some olive oil and seasonings and stick them in the oven. Next we place in the chicken in a dish and drizzle oil on it. Afterwards we sprinkle the herbs and garlic. Then we dollop large portions of jam and spread it across the chicken. Finally, we splatter a little soy sauce across the chicken and place in the oven for around 20 minutes. We then remove the potatoes, carrots, and chicken and serve. The meal is hearty, flavorful, easy, and delicious!

Side Note: You can use different jams and jellies, but we have found the elderberry jam is particularly good with the seasonings! We have a similar Berry Delicious Chicken that we enjoy as well.
