Begin by preheating the oven 350 chopping by the potatoes into wedges. In a large bowl add olive oil, garlic powder, dried parsley or dill (or both!), Parmesan, salt, and pepper to taste. Next add the potato wedges to the bowl and make sure you coat the potatoes evenly. Bake for around 20 minutes and flip the wedges. Allow them to bake for around another 20 minutes and then sprinkle with feta and fresh parsley. Yum!

Side Note: Although these are so good you don’t need a sauce, you can add a little harissa to ketchup if you want a little zing for a condiment!
