This is a fun twist on a standard taco, especially refreshing during the summer months.

Ingredients:

Tomatoes

Onions

Pineapple

Cilantro

Chicken or turkey (or another meat option)

Green, yellow, orange, and/or red peppers

Shredded cheese

Tortillas

First, prepare the pineapple salsa. Dice tomatoes and pineapple and mince onions and cilantro. Mix the ingredients together. You can add other ingredients if you wish, including salt, pepper, and/or lime juice, for a bit of extra flavor. After preparing the salsa, cook whatever meat you wish to use for the tacos. We typically use grilled chicken or ground turkey, but you can substitute another meat (such as beef or fish) or a vegetarian option. We season the meat we use with the Peruvian Chile Lime Seasoning from Savory Spice. While the meat cooks, slice peppers and onions. When all the ingredients are prepared, assemble the tacos by placing the meat, the peppers and onions, and the pineapple salsa on the tortillas. Top with shredded cheese.
