Spätzle
Olive oil (or butter)

Alpine Cheese

We love spätzle and utilize this recipe after making a large batch! Preheat the oven to 350 degrees and begin by chopping onion. Once the onion is chopped you can either fry the onion in a little olive oil for a little more flavor or simply place the onion and spätzle in a casserole dish. We drizzle olive oil and then blend to ensure the spätzle and onion are mixed well. Afterwards, we sprinkle various alpine cheese, such as gruyere or swiss cheese on top and mix again. Next, we sprinkle another even layer of cheese on top of the dish and bake until the cheese starts to brown just a little. Once you remove the dish, we sprinkle with fresh parsley and enjoy!
Side Note: We have incorporated with spices a couple times and this dish is easy to throw in some herbs and spices of your choice before baking, such as thyme or garlic, for more flavor.
