Ingredients:
Rice
Grilled Chicken

Rice Vinegar
Garlic (if desired)
Crushed Red Pepper (if desired)
1 -2 Bell Peppers
Onion
Peas
Red Cabbage

Fried Onions
Begin by cooking the rice. Next dice up the chicken (or utilize frozen grilled chicken) and place in a pan. Slowly cook the chicken in soy sauce, sesame oil, and rice vinegar to taste. You can add garlic or crushed red pepper for a little more flavor if desired. While the chicken simmers in the glaze, chop the peppers, onions, cabbage, and pineapple (or utilize a can of unsweetened pineapple). Once the chicken is cooked, add the peppers, onions, cabbage, and pineapple, as well as peas, to the pan to slightly warm. Mix everything and add any soy sauce, sesame oil, and rice vinegar to taste. Once everything is warmed, plate the rice and then the stir fry. Afterwards, sprinkle with fried onions for a little crunch!
Extras: If you would like to add a crema to this, mix a greek yogurt with sriracha and a little water for a bit of a kick! Also, if you want a little more substance, this goes great in a taco.
