Ingredients:

2 Kohlrabi or 1 large Kohlrabi

Olive Oil

Pepper

Herb of your preference

4 medium potatoes

2 cloves of garlic

1 cup of heavy whipping cream

1 cup of milk

Swiss, Gruyere, & Emmentaler Cheese blend

A little hard to find in the states, but popular in some of our older family Austrian recipes is kohlrabi. This recipe is a fun twist on au gratin. Begin by heating up the oven 350 degree. Chop the kohlrabi and potatoes into fairly small pieces, as well as a couple of cloves of garlic. Place the kohlrabi, potato, garlic, and olive oil in a bowl and mix, along with some pepper, the herb of choice, whipping cream, and milk. Place in a glass dish and pour the cheese blend on top. Bake for around 50-55 minutes.

Side Note: We have had also had VERY large kohlrabi and were able to use only half of the kohlrabi, so base the amount needed on your preference.
