Ingredients:

Olive oil

1/2 large onion or medium onion

4 tablespoons tomato puree

2 cups water & 1 bouillon cube

Minced garlic to taste

Oregano

1/2 package mini heirloom tomatoes

Thyme

It was a chilly PNW day, so we decided to make a delicious tomato soup with an assortment of items we had in the house! First, we chopped 1/2 of a large onion and 1/2 a package of mini heirloom tomatoes. Next, we drizzled olive oil in a frying pan and added onions. We fried them until they were a little golden and then added roughly 4 tablespoons of tomato puree. Next, we added two cups of water and only 1 bouillon cube. To add a little flavor, we threw in some minced garlic and oregano. We let the soup simmer for a bit and then added in the tomatoes. The soup simmered until the tomatoes were softened. Finally we placed the soup in a bowl and sprinkled fresh thyme on top, which really added a lovely flavor!
