Ingredients:

Lettuce

1/2 Onion

2 golden beets

Fuji Apple

Walnuts

Feta or Goat Cheese

Olive Oil

Greek seasoning

This is a delicious and colorful salad that we enjoy each season! Begin by cooking your golden beets. You can utilize whichever method you prefer. Although we typically prefer to bake our beets (yum!), for this, we used our crockpot. Place two golden beets in the crockpot with a cup of water for 4 hours on high. Since we work from home a lot of the time, we simply prepped this at lunch and let it cook. Once the beets are cooked remove the skins, which should slide right off and chop the beets into chunks. Next, cut one Fuji apple and 1/2 of an onion. Prepare the salad, and add the golden beets, apple, and onion to the salad, along with walnuts and cheese. We recommend Feta or Goat Cheese for this salad. Then simply drizzle olive oil and whatever seasoning you prefer. We used our Greek seasoning, which worked perfectly for a colorful, robust, and delicious salad!
