Although it is warming up, evenings are still cool, so a warm sauce with fresh vegetables is a perfect evening dish. This dish is one our of absolute favorites!
Ingredients:
2 bouillons
4 cups of water
Heirloom tomatoes
Beets
Carrots
Flour
Olive Oil
Harvest Daily 8 oz Tomato Sauce
Rice
Bison Meat or Ground Turkey/Beef
4 Bell Peppers
Begin with the sauce by preparing the bouillon cubes in 4 cups of water. Allow the broth to very slowly simmer. Chop up the tomatoes and add to the broth. Next, chop up the vegetables. Place olive oil in a pan and add the vegetables. Sprinkle in a little flour and slowly brown. Feel free to use whatever root vegetables you have! Once the flour has browned, add a can of tomato sauce, and place in the broth for a slow simmer. Stir occasionally.
While the sauce is slowly simmering, preheat the oven to 350 degrees, and prep rice, based on your need. While the rice is cooking use whatever meat you choose and pan fry with a seasoning of your choice. Once the rice and meat is cooked, blend together and place in cleaned out bell peppers. If desired, you can add cheese to the meat and rice blend. Cook the bell peppers in the oven for around 20 minutes. Once the bell peppers are cooked, place in a bowl and pour the tomato sauce over the bell peppers. We like to keep the vegetables in the sauce to make the sauce a little heartier. Afterwards, you are left with a delicious sauce base that can also serve as a soup, along with well-seasoned delicious bell peppers!

Side note: You can easily take out the meat and supplement it with more vegetables.
