Soup Week – Day 5
Ingredients:
Onion
2 – 4 garlic cloves
3 slice of bacon (we use Turkey bacon)
Olive oil
Flour
250 ml White Wine
Bouillon Cube
150 ml Greek Yogurt
Egg
Nutmeg or Cinnamon
Parsley
Place olive oil into a pot and begin to heat it up. Add the bacon to the pot. While the bacon cooks, chop the onion and garlic and place into a pot. After a few minutes dust flour into the pot and cook until slightly browned. Prepare 1 bouillon cube, and then add the bouillon cube and white wine to the pot and bring to a boil. Simmer the soup for at least ten minutes and add spices to taste. Add the yolk of one egg and the greek yogurt to the pot and whisk into the soup. Again, season to taste. We added a sprinkle of cinnamon and parsley. Finish off with some homemade croutons.
