We recently tried our own version of banana bread, with a bit of a cocoa-y/chocolate-y twist.
Ingredients:
3 Very Ripe Bananas
1/3 cup Unsalted Butter
1/2 teaspoon Baking Soda
1 Egg
1 1/2 teaspoons Dutch Cocoa Powder (from Savory Spice; feel free to substitute the type of cocoa powder used)
1/2 cup Sugar
1 teaspoon Vanilla Extract
1 1/2 cups Flour
Semi-sweet Chocolate Chips (to taste)
Place the bananas in a bowl, and mash them. Melt 1/3 cup butter, and then pour over the bananas. Combine the bananas and butter. Next, add 1/2 teaspoon baking soda to the banana and butter mixture, stirring together. Then, add 1 1/2 teaspoons Dutch cocoa powder, 1 beaten egg, 1 teaspoon vanilla extract, and 3/4 cup sugar to the mixture, being sure to combine the ingredients well. Add 1 1/2 cups flour to the mixture, and beat until smooth. Finally, add a few semi-sweet chocolate chips to the batter. We put in about 1/4 cup, but you can add as much or as little as you like. Pour the batter into a 4 inch by 8 inch bread pan, and bake at 350 degrees for about 45 minutes to 1 hour, or until a fork comes out clean. Let cool, and enjoy!
