One of our favorite meals is our version of a Greek Bowl. It is simple, fun, and flavorful!
Ingredients:
Opaa! Frozen Meat (Chicken or Gyro)
Brown Rice or Couscous (or another grain of your choice)
Cucumbers
Tomatoes
Onions
Feta Cheese
Plain Greek Yogurt
Cook the grain as instructed. We typically use brown rice or couscous and enjoy both, but other grains, such as quinoa, would also be good options. Dice the cucumbers, tomatoes, and onions into small chunks. Then, heat up the gyro meat on the stove top. When everything has finished cooking, place the grain in a bowl. Add the meat in one corner, then the veggies in different areas of the bowl. While you can simply throw each of the items in, placing each of the ingredients in one corner of the bowl can make for a fun presentation. Top the bowl with feta cheese and a large dollop of plain Greek yogurt. You can also add some hummus if you desire. The Greek bowl is an easy, healthy, but flavorful, meal that we enjoy often.
