Begin by placing ground turkey in a frying pan and begin to heat it up. We added cumin and turmeric to the turkey, but you can flavor it how you would like. Next chop half a red cabbage, 1-2 bell peppers, and an onion. Place them in a bowl and add herb vinegar to taste. In a separate bowl mix Greek Yogurt and sriracha to taste for a creamy drizzle. Once the turkey has finished cooking, place it in a tortilla, add the pickled veggies, and drizzle to taste. If you desire, you can add a sprinkle of cheese!
Another option is to add the cabbage, bell peppers, and onion directly to the meat and not pickle it; however, we think it gives a fun and tasty addition of flavor!
Side Note: You can always add a grain or substitute the Turkey for a grain to make it meatless!
