As previously written, we love pasta salad! In the summer it is a great easy, flavorful, and fun dish that utilizes fresh peppers; however, another version that we have particularly enjoyed this summer utilizes a St. Louis classic.

Ingredients:

Pasta – your choice, but our preference.

Imo’s-Dressing

1 -2 Bell Peppers

1 Large Tomato

Olives

If desired: Parmesan or Mozzarella

Begin by cooking the pasta. While the pasta is cooking, chop the bell peppers, tomato, and olives. Once the pasta is finished, let it cool. Next mix together the pasta, bell peppers, tomato, and olives. Add Imo’s dressing to taste. Allow the pasta if you are able to sit overnight because it allows the flavor to settle in more, but if need to serve fresh – that works too! You can always top it off with some Parmesan sprinkled on top or chop up some Mozzarella and mix it in.
