Although spring is here, we continue to have some chilly mornings and evenings. A warm soup with some fresh vegetables is always a nice accompaniment to a chilly spring evening.

Ingredients:

2 Bouillon Cubes or 1 container Low Sodium Vegetable Stock

Heirloom Tomatoes

1 Yellow Onion

1 Tablespoon of Olive Oil

Sprinkle of Pepper

Harvest Daily 8 oz Tomato Sauce

Homemade Croutons (optional)

First place either 2 bouillon cubes with two cups of water or one container of low sodium vegetable stock into a pot and place at a low temperature to begin warming. Next chop a package of heirloom tomatoes and a yellow onion. Place them in the pot and add a tablespoon on olive oil, a sprinkle of pepper, and a small can of tomato sauce (whichever brand you prefer). Then simply keep the sauce at a low heat and simmer for as long as desired. We typically try to let it simmer for at least an hour to two hours. We occasionally stir the sauce and just allow the flavors to emerge. Additionally, we do not strain the soup, but just allow the ingredients to soften. Afterwards, serve with some garlic bread, stuffed peppers, or whatever you would like! The soup is flavorful, easy, and delicious!

Side Note: You can also add different seasonings or heartier vegetables, like carrots or beets.
