For Easter we are planning on having one of our favorite meals, backhendl! We often have leftovers and try to come up with fun and creative ways to use the extra backhendl. One of our favorite ways, is to serve it up as a yummy baked backhendl sandwich!

Ingredients

Chicken thighs

1/2 cup – 1 cup of Flour

2 Eggs

1/2 cup – 1 cup of Bread Crumbs

Oregano

Bun of choice

Lettuce

Stonewall Truffle Aioli

Cheese if desired

Begin by preheating the oven to 350 degrees. Next place flour in one bowl, eggs in a second bowl, and bread crumbs in a third bowl. Add a sprinkle of oregano (or seasoning of choice) to the bowl with bread crumbs and mix. Then take the chicken and coat it in flour, coat in eggs, and finish by coating with bread crumbs. Next place in pan and bake for around 18 minutes, depending on your oven. Afterwards, place the backhendl on a bun, add some truffle aioli, lettuce, and cheese if you desire! You are left with a flavorful, delicious Austrian sandwich!
