We find baked potatoes to always be a nice winter meal since it warms us up; however, a classic baked potatoes additives are often unhealthy with butter, bacon, and loads of cheese, so we decided to create our own healthier version. Begin by preheating the oven to 450 degrees and then wash the potatoes. Rub olive oil on the potatoes and pierce with a fork throughout the potato. Bake for around 60 minutes; however, you will need to check, because every oven is a little different. Afterwards, apply a dollop of plain Greek Yogurt, sprinkle Mt. Eolus Greek seasoning and chives, and if desired add cheese of your choice! The Greek Yogurt is so creamy that we haven’t found the need to even use butter. This only takes five minutes to prep and makes for a lovely, warm meal that we like to prep with roasted veggies.
