In general, we like appetizers, but often find them greasy, heavy, and just too much so we try to find alternative ways to make them easy, flavorful, and healthy (St. Louis style)!

Ingredients:

Small golden potatoes

Olive Oil

Billy Goat Seasoning

Provel Cheese

Greek Yogurt

Chives

Begin by preheating the oven to 400 degrees. Next clean the outside of the potatoes (however many you need/want) and cut out any bad parts. Next rub olive oil and Billy Goat Seasoning on the outside of the potato. Bake in the oven for about 40 minutes. Remove them from the oven and allow them to cool a little. Afterwards, cut them in half, sprinkle a little more Billy Goat Seasoning, and then add provel cheese to the top of the potatoes. Place back in the oven for 5 minutes. Once the cheese is melted, remove from the oven, and allow to set for a couple minutes. Then place a dollop of Greek yogurt on each potato and sprinkle with chives! You are left with delicious, St. Louis-style, healthy, reinvented potato skins.
