This is an easy, delicious recipe that is both filling, but also light and refreshing!

Ingredients:

Olive oil

Garlic (2-4 cloves)

Gnocchi

Cherry or Heirloom Tomatoes

Basil

Parmesan

Begin by dicing up the garlic and placing in a saucepan at low heat with olive oil. Next, add the gnocchi and stir continuously to ensure it doesn’t stick to the pan. You may also need to add additional olive oil if needed. While the gnocchi and garlic are simmering in the pan, cut up tomatoes. Once the garlic is starting to brown and the gnocchi has reached a nice golden color, add the tomatoes and continue to stir. Next, cut up fresh basil into small strips, and once the tomatoes are softened, add the basil. Stir all together for about a minute and then plate. Sprinkle Parmesan on top to finish off the dish. Afterwards, you are left with an incredibly flavorful dish!
