This is a simple, easy dish that we love to have as a side accompaniment with dishes such as Wiener schnitzel, wurst, or paprikahendl.
Ingredients:
Potatoes (2-4 medium sized)
Olive Oil
Parsley
Salt & Pepper
Begin by boiling the potatoes. While the potatoes are boiling, wash and chop fresh parsley. We typically use about a 1/2 cup of fresh parsley, but it always varies slightly. Once the potatoes are finished boiling, run them under cold water, and allow them to cool for a couple of minutes. Next peel off the outside of the potatoes with a knife. Since the potatoes are cooked, the skin should easily slide off. Afterwards, cut them into cubes and place them in a bowl. Drizzle olive oil, add salt and pepper to taste, and then add the parsley. Next, mix everything together until the potatoes are all evenly coated. To finish place a couple of sprigs of fresh parsley on top.
