A local St. Louis company that has grown exponentially, is Billy Goat Chips. The company is located in the Lindenwood Park neighborhood and provides fresh, delicious chips. While we lived in New York, we would have them shipped a couple times because we enjoy them so much. Since the factory is within walking distance of where Margaret grew up we have visited a couple times and picked up their original Billy Goat seasoning. The seasoning is light and flavorful, and so we have tried to find an assortment of recipes to incorporate them. We recently had some extra parsley and decided to create our own potato chips that utilized one of our favorite seasonings – Billy Goat seasoning.

Ingredients:

-4 to 6 potatoes

-Olive Oil

-Fresh Parsley

Billy Goat Chip Seasoning

Begin by preheating the oven to 425 degrees. Afterwards slice the potatoes into wedges, or smaller, based on your preference. Next place the potatoes on a cooking sheet and drizzle olive oil over the chips. Typically, we utilize a brush to evenly coat the potatoes. Then will sprinkle Billy Goat seasoning to your persona preference. We then washed fresh parsley and sprinkled it across the potatoes. Then you will place the cooking sheet in the oven for 20-25 minutes. Remove from the oven, let cool just a bit, and enjoy! We both found the “billy goat” parsley potatoes to be an easy and delicious side dish.
