In a recent Hello Fresh box our meal came with a recipe for a lemon dressing that we really enjoyed. In fact, we liked it so much that we made a version of it for ourselves. While the recipe is similar, we changed it just a bit according to what we had available, and it turned out to be just as tasty as the first time we had it.
Ingredients:
1 tablespoon olive oil
1 lemon
1 teaspoon dijon mustard
1/2 teaspoon sugar
pepper
Combine the olive oil, Dijon mustard, and sugar together. Squeeze juice from the lemon into the mixture, according to taste (at least half the lemon). Add pepper to taste. Using a fork, rapidly stir the mixture together until smooth. Serve on a salad or anything else you might fancy, such as pasta. The dressing will be tangy, with a hint of sweetness.
