We recently made Korean Bibimbap utilizing ground turkey meat, and had around half of the turkey leftover, as well as some green scallions. Utilizing our leftovers with some things we had around the house, we made a fun, filling breakfast meal.

Ingredients:

-Olive oil

-Ground turkey 1/2 package

-1 to 2 tablespoons soy sauce

-Ginger to taste

-Garlic to taste

-3 Green Onions

-6 eggs

-Half a red onion

-Half a red pepper

-Shredded Mozzarella to taste

-Toast

Begin by placing a little olive oil in a pan and pan-frying the turkey with garlic powder and crushed ginger to taste. Once the turkey has cooked a little, add the soy sauce. While the turkey is cooking you can chop the green onions, red onion, and red pepper. Once the turkey is cooked, set it to the side. Place a little olive oil, garlic to taste, and half of chopped red onions in the pan. When the pan is a little hot, and the onion cooked some, add the eggs and make them like you would scrambled eggs. Once the eggs are cooked add the turkey, the rest of the red onion, the red pepper, and the mozzarella to the eggs. Allow the ingredients to heat up for a minute or two and then serve with toast.
