Since we have fresh arugula and spinach in the garden we have been trying to utilize them in various ways outside of salads. We recently decided to create our own savory artisan sandwich.

Ingredients:

-Fresh arugula and spinach

-Vienna bread

-Brie

Manchego

-Chutney

-Applewood cured salami

We love that Schnucks carries Vienna bread, and since it is our favorite bread in St. Louis we start our sandwich with a piece of Vienna bread. Next we add Applewood cured salami, but other meats will work too. Then we add brie for a little soft cheese, and our favorite cheese, Manchego, as a harder cheese. We lay a second piece of bread on top, and then add it to a slightly oiled pan. We cook the sandwich until the cheese begins to melt, and then remove the sandwich. Afterwards we add chutney and fresh arugula and spinach for an easy, flavorful sandwich. We have paired it with some various tomato dishes for a light, refreshing summer meal.
