We had a plethora of lemons and decided add them to pasta to create a filling, but refreshing summer meal, so we combined some ingredients to create a tasty meal.
Ingredients:
Farfalle or Rotini pasta
1 – 2 lemons
Olive Oil
Crushed Garlic
Oregano
Parmesan
Pine Nuts
Crushed Red Pepper (optional)
Begin by cooking the pasta, while the pasta is cooking mix the lemon juice, olive oil, garlic, oregano, pine nuts and Parmesan in a bowl. We do everything to taste, but approximate measurements were 1 lemon, 1/4 cup of olive oil, a teaspoon of garlic, a teaspoon of oregano, 1/4 cup of Parmesan, and 2 tablespoons of pine nuts. After the pasta is cooked, drain the pasta, and place it back in the pot. Next, add the blend to the pasta and mix. Afterwards, plate, add a little Parmesan to the top, and if you like, some crushed red pepper. Since we added the blend immediately after draining it, the blend soaked into the pasta nicely, and all of the flavors mixed well to create a refreshing summer dish with a little crunch.
