Our garden is beginning to flourish and we were trying to find a way to utilize our spinach, arugula, and tomato in a simple, but flavorful way.
Ingredients:
Tomatoes
Arugula
Spinach
Balsamic Vinegar
Olive Oil
Salt
Pepper
Feta
We began by snipping off fresh leaves and tomatoes from our plants. After rinsing them off we placed the spinach and arugula on the plate, and then sliced the tomatoes. We plated the tomatoes, and then drizzled some arugula and olive oil on top. Afterwards we sprinkled a little bit of salt and pepper on top, and finished feta on top to create a lovely, refreshing summer dish.
