We bought some Vindaloo spice from our favorite spice shop, Savory Spice, and found a recipe on their website that we adopted to make Vindaloo. The resulting dish was flavorful, and a bit spicy.
Ingredients:
Vindaloo spice
Olive oil
Boneless, skinless chicken breast
Frozen vegetables
Onion
White wine vinegar
Water
Mix 4 tablespoons of Vindaloo spice, 4 tablespoons olive oil, and 4 tablespoons of water. Cook the chicken to taste, either baking it or heating it on the stove in some olive oil. After it has cooled, slice the chicken into bite-sized pieces. Dice and saute one onion. Then, add 3 tablespoons of vinegar and the Vindaloo, olive oil, and water mixture into the pan, mixing thoroughly. Cook for 2-3 minutes, then add the chicken, 3/4 cup water, and the frozen vegetables (we used a mixture of carrots, green beans, and string beans) to the pan. Cover and simmer for 15 to 20 minutes. Uncover and cook for several more minutes until the Vindaloo reaches the desired taste and consistency. The final dish was flavorful and filling, and we enjoyed trying it.
