We have been going through our Savory Spice spices trying the suggested recipes, and came across this delicious recipe. Per our usual, we changed it a bit to make it a little healthier and our own, but the Savory Spice recipe served as the base.

Ingredients:

-2 1/2 lemons

-5 eggs

-2 stalks of green onions

-1/4 cup bread crumbs

-1 pound of ground turkey

-1 cup chicken broth

-1 cup milk

-3 tablespoons Nantucket Herb and Citrus Poultry Rub

-Black pepper to taste

-4 tablespoons of Greek yogurt

-1 cups of brown rice

To make the meatballs, combine the ground turkey, bread crumbs, one egg, minced green onions, and 1 tablespoon of Nantucket Herb and Citrus Poultry rub. Mix until well blended. Form meatballs about 1 inch in diameter, and then heat in olive oil until done.

To make the lemon sauce, combine chicken broth, milk, 4 egg yolks, 1/3 cup lemon juice (about 2 1/2 lemons freshly squeezed), 2 teaspoons lemon zest, 2 tablespoons Nantucket Herb and Citrus Poultry rub, and pepper to taste. Mix until well blended. Heat over medium heat until simmering, then add the Greek yogurt. If you’d like the sauce to be a bit thicker, add another thickening agent, such as flour.

Serve the meatballs over rice, with the lemon sauce drizzled on top. We combined this dish with some freshly cooked vegetables for our meal. It was delicious!
