StilL 630 is a craft distillery located just south of downtown St. Louis. The distillery is in an unassuming building–what was once an old Hardee’s–next to one of the train bridges that spans the Mississippi. Once inside, it’s easy to tell that this is a distillery. There are several stills along the back wall and a long communal table leading up to a bar. Behind the bar are scores of bottles, featuring different experimental variations of some of the spirits. With so many bottles, the bar area looks rather like an apothecary. Since the entire building is an operating distillery, there’s distilling equipment lying around, and lots of stacked barrels in the only other room of the building. This lends a distinct industrial vibe to the distillery.

The best way to visit the distillery is by booking a tour, which StilL 630 offers most weekends. Tours are hosted by the owner and head distiller. He discusses a bit of the history of his distillery, as well as the distilling process, which offers insight into how these different spirits are crafted. The tour concludes with a tasting, during which visitors are able to learn about some of the various spirits StilL 630 offers. These include varieties of whiskeys, rums, and gins. Some of these are small batch versions which are collaborations with other local businesses. Visitors are able to select three spirits from these options. Since there were two of us, we were able to try several of StilL 630’s offerings, and found all of them to be well-crafted and excellent choices to sample. If we had to choose a favorite, you can’t go wrong with the Rally Point whiskey, one of the distillery’s standard line-up.
