Although summer squash and zucchini are often considered ideal for summer and fall dishes, we decided to try and create a recipe that was a little heavier to make them perfect for winter. We both ended up loving the flavor and textures.
Ingredients
-1 Summer Squash
-1 Zucchini
-1/2 Red Onion
-1 large potato or 2 small potatoes
-1/2 Jar of Pasta Sauce (or make your own) We used a basil tomato sauce.
-Freshly grated Parmesan
-1 glass pan
Begin by preheating the oven to 400 degrees and then thinly slice the squash, zucchini, onion, and potatoes. Afterwards, place them upwards in the glass pan in whatever order you choose and continue throughout the pan. We ordered them potato, summer squash, zucchini, and then onion. Make sure the ingredients fit fairly firmly into the pan so that everything bakes the same. Next pour half a jar of the sauce over the entire dish. Then grate fresh cheese over the top and place in the oven. Bake for 25-30 minutes. The sauce will seep into the potatoes, summer squash, zucchini, and onions, but only slightly soften them. Afterwards you are left with a heartier vegetable dish is perfect for a cold day as a centerpiece or a side dish.
