While we’ve made veggie tacos many times in the past, we recently tried a veggie burrito that we might like even better than the veggie tacos. The two recipes are similar, but the burritos are heartier.
Ingredients:
Two avocados
Tomatoes
Red onions
Lime
Salt
Green, red, yellow, orange peppers
Brown rice
Cheese
Tortillas
First, cook the brown rice as you prepare the other ingredients. Then, make guacamole. Slice the avocados and place the fruit in a bowl. Dice tomatoes and red onion and mix with the avocados. Squeeze a fresh lime into the mixture, and add salt to taste. Mix until well blended and creamy.
After making the guacamole, slice the peppers and red onion. Once the brown rice is done, take a tortilla, and lay it flat on a plate. Place brown rice on the tortilla, then add the desired amount of peppers and onion. Add guacamole on top of the mixture, and sprinkle cheese over the top. We place quite a bit of each of the ingredients in the burrito for a big, flavorful, but healthy, burrito.
