This is a great recipe to make as a refreshing side dish, although the warmth also makes it nice for cooler weather. These baked tomatoes are delicious, and we have already made them several times.

Ingredients:

Medium or Large Tomatoes

Olive Oil

Spices of your choice (we recommend garlic and some sort of Italian seasoning)

Parmesan Cheese

Asiago Cheese

Cut the tomatoes into halves or thirds, depending on how big the tomatoes are and how much tomato flavor you want in each bite. We recommend making the tomato slices about one inch thick for a good balance of tomato, spice, and cheese. Coat the top of the tomatoes with olive oil and add spices on top. Then, sprinkle cheese over the top. Bake the tomatoes for 8-10 minutes at 350 degrees, or until the cheese is melted. Let the tomatoes cool for a few minutes before eating them; the juices can be very hot. Once the tomatoes have cooled, enjoy a warm but refreshing treat.
